The only snags I can think of:
1: If it's in a position that gets hot due to cooking then a LED will have a short life
2: When replacing 12V halogens with LEDs the MINIMUM loading of an electronic 12V supply may matter. I've found this when repalcing 50W 12V halogens. with LEDs
