Should be also applicable to the pi4b, which has a 3.5 mm 4 pole jack for stereo and composite PAL or NTSC.
tip & ring = audio (can drive 32 Ohm headphones)
ring 2 = ground
sleeve = video (allegedly can be shorted to ground, i.e. a regular TRS headphone jack is inserted, but I'm not sure.
Some 4 pole mic/headphone splitters for phone or tablet use sleeve for mic, but others use ring 2 for mic and sleeve for ground.
It doesn't do SECAM.
The Pi5 has no analogue audio and composite is on a pad:

I got a Pi4B just last week. Insanely it can do 2 x 4K HDMI. Only one if composite is used.
I recommend Mintifying an install of Ubuntu Mate ARM64 (even on 2G Pi4B) rather than official Pi OS which is inflexible. Install Synaptic Package manager from the "Software Boutique".
Linux Mint's "Disks" program will write the downloaded compressed image (either OS) and expand partition automatically for 32G, 128G, 256G etc card. A 512G or 1T card may be less value and less reliable.
A USB 3.0 storage device in one of the USB 3.0 A ports will add extra storage. I bought a 3rd party alloy case that acts as passive heatsink and a 3rd party 3.5A 5V pi PSU. A 2.1 A PSU isn't enough. I also got a 12V to USB-C 3 amp module to run it off battery or vehicle.

The Pi4B is still in production and 4G RAM is good value. My 2G RAM model was S/H from a local CEX at a good price with a warranty.
I've no 405 monitor or TV.
I do have a 6 " NTSC (BW) TV and 6" 625 model, and maybe even an NTSC RF modulator. I have 625 ones from old VCRs that have manual tuning so only need 9V.
I can't see why it can't do a wide range of line rates by text config.
